Seed Oils: Are They Really Bad for You?

Few nutrition topics have generated as much debate in recent years as seed oils.

Some health experts blame them for everything from chronic inflammation to heart disease, while others insist they are perfectly healthy and have been unfairly demonized. If you've spent any time on social media, you've likely encountered strong opinions from both sides.

So what's the truth?

As with most nutrition topics, the answer is more nuanced than a simple "good" or "bad."

The reality is that not all seed oils are created equal. Some provide valuable essential fatty acids that our bodies need to function properly. Others have become so prevalent in the modern food supply that they may contribute to an unhealthy imbalance of fats that can affect long-term health.

What Are Seed Oils?

Seed oils are oils extracted from the seeds of plants.

Common examples used in food and cooking include:

  • Soybean oil
  • Corn oil
  • Sunflower oil
  • Safflower oil
  • Cottonseed oil
  • Grapeseed oil
  • Canola oil

These oils are rich in polyunsaturated fatty acids (PUFAs), particularly omega-6 fatty acids. Omega-6s are considered essential fatty acids because the body cannot manufacture them on its own. They play important roles in growth, immune function, skin health, hormone production and cellular communication.

This is an important distinction because seed oils themselves are not inherently harmful. In fact, certain PUFAs are necessary for human health.

Understanding PUFAs

Polyunsaturated fatty acids (PUFAs) are a category of fats that contain multiple double bonds in their chemical structure. This includes both omega-3 and omega-6 fatty acids. These fats support brain function, skin health, hormone production and numerous other biological processes.

Omega-3 fatty acids, found in foods like salmon, sardines, flaxseeds, chia seeds and hemp seeds, are particularly known for supporting cardiovascular health, cognitive function and healthy inflammatory responses.

Omega-6 fatty acids are equally essential, supporting normal growth and development, maintaining healthy skin and serving as building blocks for important signaling molecules involved in immune function and inflammation.

The problem isn't that omega-6s exist.

The problem is that many of us are consuming far more than our bodies were designed to handle.

The Modern Omega-6 Problem

Historically, humans consumed a much more balanced ratio of omega-3 and omega-6 fats.

Today, however, omega-6-rich seed oils are found in nearly every corner of the food supply. They're used in processed foods, fast food, packaged snacks, baked goods, salad dressings, sauces and restaurant meals.

Many people consume omega-6 fats in amounts that exceed omega-3 intake by as much as 25:1.

This dramatic imbalance is where concerns begin to arise.

Chronic Inflammation: The Real Concern

One of the primary concerns surrounding excessive omega-6 intake is its potential role in chronic inflammation.

Inflammation itself is not bad. In fact, it is essential for healing. When you cut your finger, fight off an infection or recover from an injury, inflammation is part of the body's natural repair process.

Problems occur when inflammation becomes chronic.

Unlike acute inflammation, which resolves once healing is complete, chronic inflammation is a low-grade, persistent state of immune activation that can continue for months or even years.

Research has linked chronic inflammation to many of the most common health challenges of modern life, including:

  • Cardiovascular disease
  • Metabolic dysfunction
  • Type 2 diabetes
  • Obesity
  • Autoimmune conditions
  • Joint disorders
  • Certain skin conditions
  • Neurodegenerative disease

Omega-6 fatty acids play a role in producing inflammatory signaling molecules within the body. Again, this is not inherently harmful. The body requires these compounds to regulate immune responses and tissue repair.

The concern is that when omega-6 intake continually overwhelms omega-3 intake, the body may lose some of the natural balance that helps regulate inflammatory processes.

When this imbalance is combined with other modern lifestyle factors such as processed foods, elevated blood sugar, poor sleep, chronic stress and environmental toxins, it may contribute to an inflammatory environment that places additional stress on the body over time.

The Stability Problem

There is another issue with many seed oils that often gets overlooked.

Because PUFAs contain multiple double bonds, they are chemically fragile and prone to oxidation. This means they can become damaged when exposed to heat, light and oxygen.

When certain seed oils are heavily processed, stored for long periods or repeatedly heated during commercial frying, oxidation can occur.

This doesn't mean every seed oil is dangerous, but it does mean that processing methods matter.

A bottle of fresh flaxseed oil used in a salad dressing is very different from a heavily refined vegetable oil repeatedly heated in a commercial deep fryer.

Context matters.

Seed Oils and Skincare: A Different Conversation

One of the most overlooked aspects of the seed oil debate is that many of the same oils being discussed in nutrition are also widely used in herbalism and natural skincare.

Just as different fats serve different purposes in the diet, different oils offer unique benefits for the skin.

Polyunsaturated Oils (PUFAs) in herbalism and natural skincare:Β 

Many popular skincare oils are rich in polyunsaturated fatty acids and linoleic acid.

Examples include:

  • Rosehip Seed Oil

These oils are lightweight, absorb quickly and are often preferred for oily, acne-prone or inflamed skin.

However, because they are highly polyunsaturated, they are also more vulnerable to oxidation and typically have shorter shelf lives.

Monounsaturated oils are rich in oleic acid and tend to offer a balance between nourishment and stability.

These oils are commonly used for herbal infusions, body oils and salves because they are more resistant to oxidation than polyunsaturated oils while still providing excellent skin benefits.

Saturated Fats

Saturated fats are among the most stable fats available.

Examples include:

  • Tallow
  • Shea Butter
  • Cocoa Butter
  • Coconut Oil
  • Mango Butter

Because they contain few or no double bonds, they are naturally resistant to oxidation.

These fats excel at reducing moisture loss and supporting the skin barrier, making them particularly beneficial for dry, mature or compromised skin.

Tallow has become especially popular because its fatty acid profile closely resembles many of the lipids naturally found in human skin. It also contains naturally occurring vitamins A, D, E and K, making it a valuable ingredient in traditional skincare preparations.

What Makes High Oleic Sunflower Oil Different?

One of the biggest misconceptions in the seed oil discussion is that all sunflower oils are the same.

Conventional sunflower oil is primarily composed of polyunsaturated omega-6 fats.

High oleic sunflower oil is different.

It is produced from specially selected sunflower varieties that contain significantly higher amounts of oleic acid, making it predominantly monounsaturated and much closer to olive oil in its fatty acid profile.

As a result, high oleic sunflower oil:

  • Is significantly more stable than conventional sunflower oil
  • Resists oxidation more effectively
  • Has a longer shelf life
  • Works exceptionally well for herbal infusions
  • Has a lighter texture than olive oil
  • Provides excellent moisturization without feeling overly heavy

For many herbalists and skincare formulators, high oleic sunflower oil offers an ideal balance of stability, skin compatibility and versatility.

Why Traditional Fats Are Making a Comeback

As awareness grows regarding omega-6 imbalances and highly processed foods, many people are returning to more traditional cooking fats.

Grass-fed tallow, butter and other traditional animal fats have been used for centuries and are naturally more stable than highly polyunsaturated oils.

Tallow is particularly interesting because it contains a blend of saturated and monounsaturated fats, conjugated linoleic acid (CLA) and fat-soluble vitamins A, D, E and K.

Unlike highly processed vegetable oils, tallow remains stable at higher cooking temperatures, making it a practical option for roasting, sautΓ©ing and frying.

The Bottom Line

Seed oils are not inherently bad for you.

In fact, certain seed oils provide essential fatty acids that support brain health, hormone production, skin health and countless other biological functions.

The larger concern is the modern overconsumption of omega-6-rich oils through highly processed foods and the resulting imbalance between omega-6 and omega-3 fats. Combined with the instability of many polyunsaturated oils when exposed to heat and processing, this may contribute to the chronic inflammation that underlies many modern health challenges.

Rather than fearing all seed oils, focus on quality, balance and context.

Not all seed oils are created equal. A cold-pressed hemp seed oil, a bottle of high oleic sunflower oil used in a handcrafted salve and a highly processed vegetable oil used repeatedly in a commercial fryer are all very different products with very different properties.

Understanding those differences allows us to make better choices for both our kitchens and our skincare routines.

When it comes to fats, the goal isn't elimination. It's restoring balance.
